What is vegan dark chocolate? and how is it made?

The biggest challenge when making a particular chocolate is finding the perfect amount of each ingredient to enrich its flavour as much as possible... but why does this matter? Vegan dark chocolate is made with 3 main ingredients, Cocoa Butter, Cocoa solids (bean/nibs) and sugar. When a chocolate bar has a % sign on it, that means that chocolate has a combined total of that % of cocoa butter and cocoa solids, the rest is usually sugar, flavourings or vegetable oils. So for our vegan dark chocolate we have settled on 62% Cocoa, this means 62% of our vegan dark chocolate bar is cocoa butter and cocoa beans/nibs (Which contain cocoa butter) and 36% is sugar. These ingredients are melted, crushed, baked, winnowed (Shell removed) and ground in the perfect way to create chocolate. A lot of effort goes into every batch of our vegan dark chocolate, but as we all agree it is worth it for the melt-in-the-mouth treat that is chocolate!
